For Your Cravings: Peanut Butter Cookies
Peanut butter cookies are a classic. They’re sweet, comforting, and delicious. Our Terrace Restaurant Chef Erica Karbelnik has added something a little extra to make them even more special –a bit of cinnamon and a glaze that’s rgeat for dipping.
INGREDIENTS:
1 cup butter
1 cup white sugar
1 cup brown sugar (if you don’t have white works fine)
2 2/3 cups AP flour
1 tsp baking powder
1 tsp baking soda
1 tsp corn starch
1 tsp salt
2 tsp ground cinnamon (Whisk all together)
Pre heat your oven to 350 degrees
In a mixing bowl with the paddle attachment
1 cup butter
1 cup white sugar
1 cup brown sugar (if you don’t have white works fine)
2 tsp vanilla extract
2 eggs
For the glaze
1/2 cup maple syrup
1 cup peanut butter
1 tbs vanilla
1.5 cups cream
Mix all together till smooth (in a mixer with paddle attachment)
INSTRUCTIONS:
1.Cream the butter, white sugar, and brown sugar together
2.In a separate bowl, whisk your dry ingredients
3.Once your butter and sugar are nice and fluffy add the vanilla extract and 2 eggs, one at a time.
4.Then add your dry ingredients slowly in moderation to ensure you don’t over mix your dough.
5.Roll out balls and roll in white sugar. Place on a baking sheet keeping an even distance between to cookies so they can spread. Using a fork make hash marks on each cookie.
6.Place in the fridge for 30 minutes to set the dough.
7.Bake at 350 for about 10 – 12 minutes
